High
Altitude
Cooking
with Glenn Minuth
Enjoy better cooking
through applied science. Sunken
brownies, dried bread and fallen angel
food cake are some of the common problems experienced
by high altitude cooking. Achieve an understanding of scientific concepts to effectively compensate for cooking in the

thickening with cornstarch, caramelizing, quick breads, yeast
breads, deep fat frying and canning (hot water bath and pressure cooker) are discussed as well as how altitude affects
taste and odor. This is a lecture class; classroom is not the Studio
