SPRING/SUMMER 2016 NEWSLETTER Community Cakes is on pace to outdo ourselves yet again this year! Did you know that every year since Community Cakes was started, we have baked even more birthday cakes than the year before? And 2016 is no exception! We are so thankful for each and every one of our volunteer Bakers for making Community Cakes such a wonderful and successful organization! Thankfully with the increased demand for birthday cakes, we have been able to recruit new Bakers to join our team! Page 5 shows the names of the 12 new Bakers that we have brought on board in the last few months. But the baking is only part of what we do! Check out page 2 to see highlights from our Annual Baker Appreciation Picnic that was held in June! And page 4 provides information about Idaho Gives Day that was in May. Community Cakes participated for the first time this year and it was a major success! Another big event that we did this summer was a yard sale that was hosted by our fabulous partner Overland Court Senior Living! The yard sale drew a huge crowd and raised a massive amount of money benefitting Community Cakes! See page 3 for the generous donation we received! Thank you Overland Court! But we continue to move forward and the best is yet to come! 2016 still holds tons of special events and surprises for our Bakers and Partners! Baker Appreciation Picnic 2016 Every year, Community Cakes likes to do something to say thank you to our amazing volunteer Bakers for all that they do throughout the year. In years past it has been a brunch but this year the board of directors wanted to liven things up a little with a festive picnic! Tons of volunteer Bakers showed up for the party! There was a cake bounce house for the kids (and some adults too) as well as enough food to feed an army! The quarterly Pantry Party was held at the picnic as well. We even had prizes! Nearly every Baker that came to the picnic left with a prize or at least baking supplies and goodies! CC BAKER OF THE SEASON: SEASON: SAMANTHA PETERSON We are pleased to honor Samantha Peterson as our Baker of the Season! Samantha is one of our newer volunteer Bakers but is definitely staying busy and baking up a storm! It’s surprising that Samantha has any time to bake! She just got engaged on the Fourth of July, 2016 and they plan to get married in 2017. Samantha is currently a full time student and also works as a Learning Assistant, helping students understand Anatomy and Physiology. This summer she worked in a research lab studying hepatic stellate cells and liver fibrosis. All of this school has led her to her passion and she now has medical school in her future as well! working out. Samantha doesn't have pets of her own but loves her "nephew" Cooper and "sister" Elsa, both Golden Retrievers (pictured). Samantha loves Community Cakes. She said her favorite thing about the organization is ‘I get to do two things that I love to do, baking and volunteering, at the same time! It's always a feel-good day when I drop off that cake!’ She shared with us three of her favorite Community Cakes moments: 1) when I'm awake at 2am and the house is dead quiet, the kitchen is a disaster area, and I am IN THE ZONE; 2) when whoever I hand the cake to gets excited; 3) explaining Community Cakes to anyone and everyone and helping to recruit! When she’s not buried in schoolwork, her hobbies are baking and baking and baking some more! She’s the go-to person for baking So we say thank you to Samantha projects in her family. She recently for all of her hard work as a made cupcakes for her brother's volunteer Baker! We also wish wedding to complement the cake he Samantha well for her upcoming ordered. She also enjoys doing adventures with school and crafts, digging in the garden, reading, and marriage! BAKER TIP… To preserve the moisture of your cake, eat the whole thing in one sitting! Thank you to Overland Court for hosting a yard sale to benefit CC! We are eternally grateful for the $545 we received from this event! Wowza! “Gratitude is felt toward him who gives.” - Aristotle 2016 marks the first year that Community Cakes participated in the annual Idaho Gives Day presented by the Idaho Nonprofit Center. Idaho Gives Day is a statewide event promoting local nonprofit organizations and encourages the community to donate to these organizations on this day of fundraising. Community Cakes is already preparing for next year’s event and brainstorming ways to make it even bigger and better! Thank you to everyone that participated in this year’s Idaho Gives Day! Community Cakes is deeply saddened by the loss of our volunteer Baker Ruthie Rodin. Ruthie has been baking for Community Cakes since the very beginning. She always made time for the Community Cakes get-togethers as well as baking multiple cakes each month. Community Cakes would like to honor Ruthie’s memory and giving spirit with the Ruthie Rodin Award. This award will be given annually to a deserving volunteer Baker. Lemon Lime Layer Cake Lemon Cake Ingredients: • • 1 cup (2 s$cks) unsalted bu%er, room temperature, plus more for pans 2 1/2 cups all-purpose flour (spooned and leveled), plus more for pans • 1/2 teaspoon baking powder • 1/2 teaspoon baking soda • 1 teaspoon salt • 1 tablespoon lemon zest • 1 1/2 cups sugar • 2 large eggs plus 3 large egg yolks • 1/4 cup fresh lemon juice • 1 cup low-fat bu%ermilk Baking Instruc)ons: 1. Preheat oven to 350 degrees. Grease two 8-by-2-inch cake pans. In a bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest. 2. In a large bowl mixing bowl, cream together bu%er and 1 1/2 cups sugar un$l light and fluffy. Reduce mixer speed to low and add in eggs and yolks. Mix in lemon juice. Alternate adding in flour mixture and bu%ermilk beginning and ending with flour. Mix un$l well combined. 3. Pour ½ of the ba%er into one pan and add the remaining to the second pan. Place in oven and bake for 30-35 minutes or un$l cake starts to pull away from the sides of the pan. 4. Remove cakes from the oven and cool Lime Bu(ercream Ingredients: • 7-8 cups confec$oners' sugar • 2 limes, juiced • 6 tablespoons lime zest • 1 cup bu%er, so3ened to room temperature • 8-10 tablespoons milk Congratulations to CC’s Treasurer Morgan Keating for the birth of her second daughter, Paige Kathryn Keating, on 8/12/16. Paige weighed 8lbs at birth and was 21 inches long. Paige’s big sister Kennedy (2 years old) is so excited! Daddy Shawn Keating is over the moon about his family of girls! completely. 5. While the cakes are cooling, make lime bu%ercream. In a large bowl, cream together the confec$oners' sugar and bu%er un$l smooth. Gradually mix in the milk, lime zest and juice with an electric mixer un$l smooth and s$ff, about 5 minutes. Color with food coloring if desired. 6. Frost and decorate the cake. Delicious!
